Ingredients:

  • 2 cups poha (flattened rice)
  • 2 tablespoons Ankur Sunflower Oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 1-2 green chilies, finely chopped
  • 8-10 curry leaves
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 medium potato, boiled, peeled, and chopped into small cubes
  • 2 tablespoons roasted peanuts
  • 2 tablespoons chopped coriander leaves (cilantro)
  • 1 tablespoon lemon juice
  • Fresh grated coconut for garnish (optional)
  • Chopped coriander leaves for garnish

Instructions:

Rinse the Poha:

  • Rinse the poha in a colander under running water for a few seconds. Drain well and set aside.

 

    Prepare the Tempering:
    • Heat Ankur Sunflower Oil in a pan over medium heat.
    • Add mustard seeds and cumin seeds. Let them crackle.
    • Add chopped onions, green chilies, and curry leaves. Saute until the onions turn translucent.

     

    Add Potatoes and Spices:
    • Add turmeric powder and salt to the pan. Mix well.
    • Add boiled and chopped potatoes. Mix gently to coat them with the spices.

     

    Combine Poha:
    • Add the rinsed and drained poha to the pan. Gently toss everything together until the poha is well coated with the spices.
    • Cook for 2-3 minutes, stirring occasionally, until the poha is heated through.

     

    Add Peanuts and Finish:
    • Add roasted peanuts and chopped coriander leaves to the pan. Mix well.
    • Drizzle lemon juice over the poha and give it a final mix.

     

    Garnish and Serve:
    • Garnish the poha with fresh grated coconut (if using) and chopped coriander leaves.
    • Serve hot with a side of yogurt, green chutney, or pickle.
