Ingredients:
- 2 cups poha (flattened rice)
- 2 tablespoons Ankur Sunflower Oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1-2 green chilies, finely chopped
- 8-10 curry leaves
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1 medium potato, boiled, peeled, and chopped into small cubes
- 2 tablespoons roasted peanuts
- 2 tablespoons chopped coriander leaves (cilantro)
- 1 tablespoon lemon juice
- Fresh grated coconut for garnish (optional)
- Chopped coriander leaves for garnish
Instructions:
Rinse the Poha:
- Rinse the poha in a colander under running water for a few seconds. Drain well and set aside.
- Heat Ankur Sunflower Oil in a pan over medium heat.
- Add mustard seeds and cumin seeds. Let them crackle.
- Add chopped onions, green chilies, and curry leaves. Saute until the onions turn translucent.
Add Potatoes and Spices:
- Add turmeric powder and salt to the pan. Mix well.
- Add boiled and chopped potatoes. Mix gently to coat them with the spices.
Combine Poha:
- Add the rinsed and drained poha to the pan. Gently toss everything together until the poha is well coated with the spices.
- Cook for 2-3 minutes, stirring occasionally, until the poha is heated through.
Add Peanuts and Finish:
- Add roasted peanuts and chopped coriander leaves to the pan. Mix well.
- Drizzle lemon juice over the poha and give it a final mix.
Garnish and Serve:
- Garnish the poha with fresh grated coconut (if using) and chopped coriander leaves.
- Serve hot with a side of yogurt, green chutney, or pickle.
